Boxing Day Snack: Seasoned Roasted Nuts

Seasoned nuts and seeds are a good alternative to crisps and salty snacks. And that's exactly what is needed after Christmas days feasts. The best thing about this snack? You can make it the way you want it - sweeter, more savoury, spicy, or extra zesty, whatever you prefer. 

Simply make by taking some unsalted mixed nuts, coating in a liquid such as soy sauce/tamari sauce and/or a tiny splash of maple syrup (you don’t even need oil). 

You can make them spicy by adding chilli flakes or cayenne pepper, or flavour with other fresh or dried herbs like rosemary, spices like turmeric, black pepper, garlic powder, cinnamon, sprinkle with sesame seeds, black onion seeds or pumpkin seeds - experiment as anything goes! 

Ingredients:

  • Mixed nuts or nuts of your choice (unsalted)
  • Spices/coating of your choice: soy sauce/tamari sauce/maple syrup; chilli flakes/cayenne pepper/rosemary/turmeric/black pepper/garlic powder/ cinnamon/sesame seeds/black onion seeds/pumpkin seeds.

Method:

  • Preheat the oven to 180C/160C Fan/Gas 4 and line a baking tray with baking paper.
  • Place all the ingredients on the prepared tray and mix well to combine.
  • Roast for 15–25 minutes, stirring every 8–10 minutes until golden brown all over.
  • Remove from the oven and leave to cool before serving. Keep them in an airtight jar for when you feel like a snack.
