Gorgeous Peanut Butter Protein-Packed Cookies

These cookies are so easy to make with a melt in the mouth crumbly texture that will have you coming back for more!

Ingredients

  • 1 cup of peanut butter
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1.5 cups ground almonds or almond flour

Method

  • Preheat your oven to 180°C and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the peanut butter, maple syrup, and vanilla extract. Stir until the ingredients are well mixed.
  • Add the almond flour to the peanut butter mixture, stirring until a thick dough forms. The amount of almond flour needed may vary according to how runny your peanut butter is.
  • Using your hands or spoon, portion out the dough and roll into balls. Lay on your prepared baking sheet and flatten each cookie with a fork, creating a criss-cross pattern. This not only adds the classic PB cookie look but also ensures even baking.
  • Bake the cookies in the preheated oven for 12-14 minutes, or until they are golden brown around the edges. Keep a close eye on them to prevent overbaking, as this can result in dry and crumbly cookies.
  • Once baked to perfection, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes. Transfer them to a cooling rack to cool completely before enjoying.
