Ingredients
- 4 peach halves – skinned and pits removed
- 2 tbsp maple syrup
- 1 heaped tsp balsamic vinegar glaze
- 1 tbsp fresh chopped basil
- Fresh whole basil leaves for garnish
- 4 heaped tbsp coconut (or soy) yoghurt
- 1 lime – zest
Instructions
- Whisk together the maple syrup, balsamic vinegar glaze, and chopped basil. Drizzle over the peaches and marinate for 30 minutes.
- Heat a grill on high. Place peaches (cavity facing up) on the hot grill and grill for 3 minutes. Turn over and spoon the remaining vinaigrette over the peaches. Grill for a further 3 minutes until they start to caramelise.
- Serve whilst still warm over yoghurt. Drizzle with additional maple syrup, garnish with lime zest, and fresh basil leaves.
