Need a quick pick-me-up to power through a long day at uni or work? These coconut energy balls by James from Vegan With James are the perfect portable snack to keep you fuelled and focused.
Whether you need a boost to get through the afternoon or some extra energy for your pre-workout routine, these tasty bites have you covered!
Ingredients:
- Dates - 200 g - remember to remove stones before adding them to the mixture!
- Coconut grated - 1 tbsp
- Chia seeds - 1tsp
- Cocoa powder - 1tbsp
- Cashews- 150g
- Agave syrup or maple syrup - 1tsp
- Pinch of salt
Optional: fill with nut butter of your choice
We tried peanut & almond butter, but it works well with pistachio butter too!
Instructions:
- Soak dates and cashews in hot water for 10-15 mins until soft
- Blend all ingredients together. Start by blending the cashews and dates together and slowly add in the chia seeds, cocoa powder and coconut flakes
- Roll the mixture into balls- if you want to fill them then make sure to add the filling before forming a ball shape.
- Coat the energy balls in coconut flakes or a different topping of choice.
You can enjoy these energy balls straight away once you have made them - but we think they taste the best after they have been stored in the fridge for a couple of hours.
These are the perfect energy-boosting snack, or a great option for breakfast on-the-go!
About James:
Hi there, my name is James and I am a UK-based content creator, promoting a plant-based lifestyle and vegan recipes via my accounts @veganwithjames. I have been vegan for over 1,5 years now and I love how taking the step towards a more sustainable lifestyle also sparked my passion for cooking and getting into the kitchen. I've never been a big baker, although I have made a few treats in the past! My passion really lies with cooking and making simple, but also nutritious recipes. I love the challenge of having to work with what's left in the kitchen fridge and to throw completely random but exciting recipes together! My go-to brunch recipe has to be a tofu scramble, but I also love international cuisine and I can't resist a pad thai for dinner! I'll either be out and about travelling, in the kitchen cooking or (occasionally) writing a university assignment!
