Vegan Coconut Energy Balls For Breakfast On-The-Go

Need a quick pick-me-up to power through a long day at uni or work? These coconut energy balls by James from Vegan With James are the perfect portable snack to keep you fuelled and focused.

Whether you need a boost to get through the afternoon or some extra energy for your pre-workout routine, these tasty bites have you covered!

Ingredients:

  • Dates - 200 g - remember to remove stones before adding them to the mixture!
  • Coconut grated - 1 tbsp
  • Chia seeds - 1tsp
  • Cocoa powder - 1tbsp
  • Cashews- 150g
  • Agave syrup or maple syrup - 1tsp
  • Pinch of salt

Optional: fill with nut butter of your choice

We tried peanut & almond butter, but it works well with pistachio butter too!

Instructions:

  1. Soak dates and cashews in hot water for 10-15 mins until soft
  2. Blend all ingredients together. Start by blending the cashews and dates together and slowly add in the chia seeds, cocoa powder and coconut flakes
  3. Roll the mixture into balls- if you want to fill them then make sure to add the filling before forming a ball shape.
  4. Coat the energy balls in coconut flakes or a different topping of choice.

You can enjoy these energy balls straight away once you have made them - but we think they taste the best after they have been stored in the fridge for a couple of hours.

These are the perfect energy-boosting snack, or a great option for breakfast on-the-go!
