Created by the talented Emily, these White Chocolate Silken Tofu Pots are a perfect blend of creamy, rich flavours and smooth textures. They make a delicious treat that's not only indulgent but also vegan-friendly and wholesome.

Ingredients
(makes 3-4 depending on size)
- 120g white chocolate
- 350g pack silken tofu
- 1 lemon
- 20g agave, maple syrup, or any other vegan syrup you typically use
- berries of choice
Method
- Melt the white chocolate in a heatproof bowl above some boiling water. Make sure the bowl is large enough so not water gets in.
- In a blender, mix the silken tofu, white chocolate, syrup, along with the zest of the lemon, the juice of half of it. Add a pinch of salt.
- Place a few berries in the bottom of glass ramekins. Spoon the chocolate mixture on top and finish with a little more lemon zest for decoration.
- Leave to set in the fridge for a minimum of 2-3 hours. Dig in.
