White Chocolate Silken Tofu Pots

They make a delicious treat that's not only indulgent but also vegan-friendly and wholesome.

Ingredients

(makes 3-4 depending on size)

  • 120g white chocolate
  • 350g pack silken tofu
  • 1 lemon
  • 20g agave, maple syrup, or any other vegan syrup you typically use
  • berries of choice

Method

  • Melt the white chocolate in a heatproof bowl above some boiling water. Make sure the bowl is large enough so not water gets in.
  • In a blender, mix the silken tofu, white chocolate, syrup, along with the zest of the lemon, the juice of half of it. Add a pinch of salt.
  • Place a few berries in the bottom of glass ramekins. Spoon the chocolate mixture on top and finish with a little more lemon zest for decoration.
  • Leave to set in the fridge for a minimum of 2-3 hours. Dig in.
